The fruit that went ‘round the world, and the fruit that we both like the best, this week we are covering the peach tree (Prunus persica). However, we go one step further and Casey tries to convince Alex that it's not just the peach, but everything like a peach that reigns supreme in a world full of fruit!

Summer Peach, Cherry Tomato, Corn and Hazelnut Salad by Spencer Huey:

This salad is the best during the height of summer with fresh produce from your local farmer’s market.

3 ripe yellow peaches, wedged

2 ears of sweet corn, cut off the cob

2-3 cups of cherry tomatoes, halved

1/2 cup toasted hazelnuts, roughly chopped

Vinaigrette: mix 2 tablespoons olive oil, 2 tablespoons unseasoned rice vinegar (or lemon juice and lemon zest)

Salt

Basil, 4-5 sprigs

Toss the peaches, corn, cherry tomato, and hazelnuts with the vinaigrette in a bowl. Season well with salt. Plate and rip the basil leaves on top.

Use whatever stonefruit/tomatoes/nuts you have on hand.
